Best Chicken Ever

This is Captain Crunch Chicken. It sounds crazy but I'm telling you... ITS DELICIOUS. Trust me!

You'll need:
3 cups Cap'n Crunch Cereal
1 cup cornflake cereal
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
1 egg
1/2 cup milk
4 boneless, skinless chicken breasts cut into bite sized pieces

How to:
Heat up your deep fryer to 325 degrees. Put both of the cereals in a Ziploc bag and crush up with a rolling pin, or a cup works too. Combine the the crushed cereal with the other dry ingredients in a medium sized bowl. In another medium bowl, beat the egg with a fork and stir in the milk. Dredge the chicken in the milk and egg mixture. Retrieve your chicken pieces with a slotted spoon then put it in the dry mixture in the bag and toss until the chicken is evenly coated. Let the chicken fry until its a light golden brown. Each deep fryer has different instructions on how long to cook chicken so you may wanna check that out as well. It should be about 3-5 minutes.

Enjoy, I know you will.

Things are looking good!

Today my grandpa is in recovery after he had cancer removed from his lungs. Did you know that they like crack open your ribs to get in there? No way I'd let that happen to me! haha ouch! ANYWAYS he's in recovery for a few more days before he's aloud to come home, which is sad because I don't think he's going to be able to come hunting with me this weekend! What a shame. Also this weekend... EASTER! Easter is a great time to get together with my aunts uncles and grandparents and have some amazing food! Can't wait. I'll have to post the recipe to the dish I enjoy the most this Sunday. Until then... Stay hungry my friends! haha

Grilled Salmon

It's Friday night and I just went out to the store to get something to cook up for dinner tonight. I found a beautiful piece of salmon that I couldn't resist. Here is my first recipe, its a really nice way to prepare salmon.

Ingredients:   vegetable oil spray
                    1/2 cup shopped shallots
                    1 tablespoon lemon-pepper
                    1 tablespoon chopped dill
                    1/4 cup drained capers
                    2 tablespoons butter
                    1  1 1/4- pound skinless center-cut salmon fillet

How to:  Preheat your oven to 425. Lay foil onto a baking sheet and spray the foil with your vegetable oil spray. Next mix your shallots, chopped dill and capers together in a small bowl. Place your salmon onto the foil and lightly season with lemon pepper. Spread your shallots mixture onto the salmon. Dot lightly with butter. Fold up the foil around your salmon and seal the edges. Now your going to bake your salmon for about 28 minutes or until the center is opaque.  After the baking is done put your salmon on a platter. I like to drizzle the juices from the foils over my salmon to give it extra flavor and a nicer, moist, texture. I like to cut up some fresh lemons and put them on the platter along with the salmon to give the dish a beautiful refreshing feel.

Let me know how you enjoy this recipe, I know I will. Until next time,
